Late lunch
Butterflied chicken breast, marinated in olive oil, salt, pepper, garlic, and worchestershire sauce, sauteed and served over a bed of baby spinach with shaved Parmesan cheese, croutons, and a dressing of Vegenaise, worchestershire sauce, minced anchovies, and the lemon-juice-deglazed drippings from the frying pan in which the chicken was sauteed.
30 minutes to prep. Enjoyed in my own company with a glass of water. Maybe use less anchovy next time.
